Suggestions for material grade for stainless steel shaft.

Hi,

I need suggestions for what grade material should I use to make a centrifuge shaft out of. I'm using 70 mm bore taper roller bearing with a 60 mm bore and preloading it with a lock nut. It's not a critical application but I'm reluctant to use 304 or 314 grade SS as it might be too soft and nut threads might get damaged. Any suggestions for a harder grade preferably popular are welcome.

P.S. It needs to work inside a fryer submerged in cooking oil.
