Is a summer project a good way to add experience to your resume ?

Currently a sophomore in ME but the internship hunt for this summer isn’t going too good. Now I’m considering what else I can do this summer that can help me add some experience to my resume. I’ve been thinking of building a electric go kart or some other project but not sure exactly yet.
